Sweet Potatoes, Anyone?


Calling all Chefs!!

Next week is Thanksgiving, and I have been asked to bring some sweet potatoes! Of course, I'd be happy to do that....

Problem: I don't have a sweet potato recipe. "Look for one online!", you may say to me. Let me tell you, I have. And may I just tell you that there are 365,000 sweet potato recipes online!?! Some with granola, some with marshmallows.... it goes on and on. Jaclyn has offered her recipe to me, so as of right now, that is what I am using.... but I thought I'd open it up to the wide world of web, or atleast to my bloggy friends!

So, here is where you come in....

1. Do you have a sweet potato recipe you would recommend?

2. If you are a fan of the sweet potatoes, do you prefer them mashed?

3. Do you prefer marshmallows on top, or is that too much of a good thing?

I need to make this for about 15 people....

Comments please! I will pick the recipe that is seems easiest! (I don't wanna mess this up!) Any help would be very much appreciated!

I love sweet potato casserole and yes I think they're better mashed in the casserole. My guess would be as good as yours for a recipie. And yes marshmallows are good along with pecans. Love the blog! I'm ecstatic to have a new blogging friend!

Personally, I'm not so hot on mashed sweet potatoes, but roasted? Well that's another story.

They are lovely tossed in olive oil, cracked pepper and salt and roasted until crispy and golden. Then add a drizzle of honey just before serving. Et voila, honey roast sweet potato. What could be simpler! x

i'll hunt down one i had once that was great---had pecans & brown sugar, but no 'mallows. i also like them baked then thickly sliced & carmelized with butter & brown sugar in a skillet (how mike's grandma makes them--and how i will make them in her honor).

Jen,
Here is my sweet potato souffle recipe. It is the best & pretty easy too!
Ingredients:
3 c. mashed sweet potatoes (about 3lbs. will do)
1 c. white sugar
1/2 tsp. salt
1/3 stick of butter (melted)
1/2 c. milk
1 tsp. vanilla
2 eggs (slightly beaten)

Mix above ingredients and pour into a greased baking dish.

Topping:
1/3 stick of butter
1/3 c. flour
1 c. brown sugar
1 c. pecans (optional)

Melt butter, add flour, brown sugar and pecans. Mix well and place topping over potato mixture and bake at 350 degrees for 35 minutes.

I was just about to post a recipe, then realized Erica had posted one almost identical to the one I make. The only difference is mine has 3/4 cup brown sugar mixed in with the sweet potatoes instead of the white sugar. My family has been making them this way for years, and girl they are GOOD!!

Ok I am with Erica - that is almost exactly the recipe we use and it is yummy
Although it is sweet and more a dessert than a veggie - hehe
And as far as marshmallows go - i say no

OK. Just made the BEST spicy brown sugar and maple sweet potatoe cassarole recipe. I'll post it when I get home.

Definitely NO on the marshmallows. waaaaay too sweet.

Oh, harass LuLu too, because their family has another recipe that is to-die-for! Good luck!

My "mommy brain" can't remember if I ever commented, but I have just LOVED reading your blog. My husband LOVES sweet potato casserole and has a very specific recipe from his aunt that I am going to make this year. I'll send leave the recipe when I get it! Thanks for de-lurking!

although a bit more involved than erica's...thought i'd follow through and post this....
here's the recipe my friend sent me (actually, link on my facebook wall):

INGREDIENTS
(serves 8)
3 large sweet potatoes
3 tablespoons butter, softened
1 cup packed brown sugar
1 cup chopped pecans
1 cup flaked coconut (optional)
1/3 cup all-purpose flour
1/2 cup white sugar
2 eggs
1/4 cup milk
1 tablespoon grated orange zest
3 tablespoons butter
1 teaspoon vanilla extract
1/2 teaspoon salt

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Poke holes in the sweet potatoes with a fork, arrange the sweet potatoes on a cookie sheet. Grease an 11x7 inch glass baking dish.

Bake sweet potatoes for 1 hour. Let cool, then mash in a large bowl. There should be approximately 3 2/3 cups of mashed sweet potato.

Combine softened butter with brown sugar, nuts, coconut and flour; stir with a fork. Set aside.

Combine sugar, eggs, milk, orange peel, butter, vanilla, salt with the mashed sweet potatoes. Beat the mixture with an electric mixer until smooth. Pour mixture into prepared baking dish. Sprinkle the brown sugar-nut mixture over the top of the mixture.

Bake for 35 minutes.

you'll have to let us know which one you go with. :)
